Unique Flavor Components of Mexican Dishes

Characteristic Mexican flavors are comprised of an array of seasonings that include chili pepper, cumin, and oregano. Distinct from Italian varieties, Mexican oregano is not a “true” variety of the herb and grows as a shrub. Often paired with garlic-, onion-, and tomato-based sauces, it has a delicate yet earthy taste. Cumin provides a toasted and slightly bitter flavor to a number of Mexican sauces and is incorporated alongside oregano and chili peppers in many chili powders.
Another distinctive Mexican flavor, chipotle is created from jalapeno peppers that have been dried and slow smoked. Used in marinades and rubs, chipotle informs the taste of spicy sauces such as adobo. Many Mexican dishes also have hints of sweetness, with this provided via herbs such as anise, cinnamon, and cloves.
